Each airline releases on different days, but the release is at midnight in the time zone of the home office, a lot of times Monday, Tuesday or Wednesday, but fare sales can be announced whenever. The best time to book is atleast 30 days out. The closer you get to the time of departure the more expensive a ticket will be as the seats become sold out.

I am not sure how they do it each week but I believe the best time to book a date would be at least 2 weeks prior to you flight date, some airlines will give you your money back up until the our prior to your flight. Hope this helped!
