If you put them in the fridge the chocolate could become chalky. You can keep them out for as long as you would keep out strawberries...

No. I worked at a chocolate store for 5 years. For mothers day and Valentines day we hand dipped strawberries. The sooner they are served the better. The only reason for refrigeration is to allow faster hardening of the chocolate. The chocolate will not "turn chalky" in the fridge if you tempered it correctly, so don't worry about that. The biggest thing is serving them the same day they are dipped. If not the strawberry starts to cordial, which is a big disgusting mess. Hope this helps.

Depends if you want a solid coating of chocolate, or a drippy-fondue-like coating. If you don't plan to serve them right away, it's probably best to keep them in the fridge, and then take them out an hour or so before serving (depends on the temperature of the room).

You can put them in the fridge for about 10 minutes to firm up, but you shouldn't store them in the fridge, because the fruit will start to "sweat" - and chocolate doesn't mix well with water. Makes those white yucky spots.

well what i do and it seems to work either i use the chocolate syrup that gets hard when something cold hits it or i freeze the strawberries then when I'm ready for them i just take them out and let them set and the when you dip them they will be juicy and chocolate won't be everywhere. good luck hope i helped

i would put them in the fridge just to help the chocolate set faster, and cold strawberries seem to taste better.
to keep the chocolate from turning white, mix in a tablespoon of vegetable shortening (like crisco) for every 8 ounces of chocolate when you melt it.

yeah you should keep em in the fridge until ready to serve, if it's not hot in the house they should be ok for a few hours but if they start to "sweat" put em back in the fridge, or even serve them on a tray that has a layer of ice under (not on) it to keep em cool.

i like mine refrigerated for like at least 30-45 minutes, because the longer they sit in the fridge the strawberries start to get juicy and sweet. but when you leave them out...( after being in the fridge) for some reason they start to sweat and its not so pretty!!
