Classic Quiche Lorraine
Yield: 6 Servings
Ingredients
1 quiche pastry
8 sl bacon
8 oz gruy‚re cheese
--------------------------------CUSTARD-----------------------------------
1 c whipping cream
4 egg yolks
1 pn salt
1 pn cayenne
1 pn nutmeg
1 c table cream*
1 whole egg
2 egg yolks
1 pn salt
1 pn cayenne
1 pn nutmeg
Instructions
Fry bacon until very crisp. Drain on paper towels. Slice cheese. Fill
prepared quiche shell with overlapping slices of cheese and bacon.
Pour on custard. Bake in preheated 375 F oven 35 to 45 minutes, or
until custard is puffed and tests completely done and pastry is
nicely browned. Allow to rest five minutes before serving.
Note: Sometimes in France, blanched salt pork cut into julienne
strips is substituted for the smokier tasting bacon.
Custard: blend ingredients together and use as directed in quiche
recipe.
*If table cream is not available, use 1/2 cup whipping cream and 1/2
cup half & half.
Variation: Fill shell with tiny cubes of ham and Gruy‚re cheese.
Variation: Substitute slices of well aged Cheddar or domestic Munster
for Gruy‚re.

Not hard to find. Whatever recipe you use, here is a secret ingredient you will not find: cream cheese. Cut up cream cheese into small cubes and add to mixture. I was the Production Manager for a college dining service. Everyone raved about our quiche.

You can find one almost anywhere. Here's one:
1 Pie crust
3 eggs
1 1/2 cups milk
3/4 cup onion
6 oz bacon
6 oz swiss cheese
0. Pre-cook the pie crust as to the directions on the package (generally, at 400 degrees for ~10 mins)
1. Cook the back until crisp. In the bacon fat, cook the onion until translucent.
2. Add the bacon, onion, and cheese to the cooked pie crust
3. Mix eggs and milk and pour into the pie crust
4. Bake at 350 for ~45 mins

Quiche Lorraine
CRUST:
2 cups sifted all-purpose flour
1/2 teaspoon salt
3/4 cup butter-flavored shortening
3 to 4 tablespoons cold water
FILLING:
12 bacon strips, cooked and crumbled
4 eggs
2 cups half-and-half cream
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1-1/4 cups shredded Swiss cheese
Combine flour and salt in a mixing bowl. Cut in shortening with a pastry blender until mixture resembles peas. Add water, a little at a time, until dough comes away from the bowl. Form dough into a ball. Divide in half. On a lightly floured surface, roll half of dough to fit a 9-in. pie plate; transfer to pie plate. Trim and flute edges. Chill. Wrap remaining dough; chill or freeze for another use. For filling, sprinkle crumbled bacon into the chilled pie crust. In a bowl, beat eggs, cream, salt and nutmeg. Stir in cheese. Pour into crust. Bake at 425° for 15 minutes. Reduce temperature to 325°; continue to bake for 30 to 40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting. Yield: 6 servings.
