Whatever the rest of us eat. I'm not a short order cook. My oldest is picky, so I always make sure there is at least one dish on the table that he likes. Could just be mac and cheese or rice to go with the main dish the rest of us are eating, but there's something he likes included. I just don't plan around his limited tastes.
taco pie
baked potatoes with fajita toppings
taquitos
quesadillas
grilled cheese with tomato soup
potato soup
onion soup
cheese soup
tortellini soup
teriyaki chicken
crab cakes
popcorn shrimp
chicken and cheese crescents
Chicken Helper meals
Manwich
chicken parmesean
chicken caccitore
spaghetti with meat sauce
fetticuini alfredo
ravioli
tortellini
manicotti
tuna sandwiches with fresh veggies and chips
Captain Crunch chicken
chicken enchiladas
hot dogs with mac and cheese
fish sandwiches with french fries

I spend one day a fortnight cooking and freezing meals, so when i get home from work, i just throw a meal in the microwave. I make it from scratch, so i know exactly what is in it and that it's nutritious. Getting the kids to help make the meals makes them enthusiastic and more likely to eat it, cause they "made" it. Works for me, but everyone is different. You can give this to your 11 month old too, just puree it to the cnsistency he likes. The alternative is to invest in a slow cooker.

I have found that a slow cooker or a crock-pot works wonders. You can cook almost anything in them and there are whole recipe books dedicated to the subject. the great thing is that you put it all together while the little one is sleeping and it cooks all day. Your family can then eat whenever each one is ready. Best of all, it's healthy.

My kids usually eat what we eat unless my husband won;t be home for dinner I will sometimes feed them so they do not eat too late. I will either stick a Amy's organic pizza in the oven or make pasta and sauce for them in those cases. Sometimes we have theme dinners. One night will be pasta night, the next will be sandwich night, another night will be tacos, another night will be rice and beans etc etc. All easy.

Well, actually my son eats whatever I give him. There's no what do you want questions in my house. Nope, he eats what he's told to eat. Or he doesn't get any treats for the rest of the day. No yougurts, no fruit snacks nothing. He has to eat his dinner. But my son likes just about anything but fish. So he's easy going.

Microwave fish and chicken, it takes minutes and is healthy. You can also microwave a potato quickly. A rice steamer is a nice investment, its quick and makes fool proof rice every time.

My kids eat whatever i cook for dinner. If they don't like then they leave it on their plate, but i usually don't have that issue.
