I entertain at birthday parties for a living and 99% of them are on Saturday afternoons. So you may actually have a better turnout on a Sunday afternoon because people won't be going to another party! I would give them a reminder call if they haven't RSVP'd.
If you are hoping for mostly school friends and no out of town family you could even have a party in his school classroom, providing an entertainer that has a school appropriate show, such as Friendship. That would be during the school day.

Saturday afternoon: no school/work day, you have Saturday morning to fix last details and the guests to do what they have to do, stores are open for last minute/emergency shopping, the children will have the next day to rest and you to clean up.

Saturday. Then you have all day Sunday to clean up before you have to go back to work and pay for all the fun you had on Saturday.

Saturday.
It gives the other families Sunday to relax at home or go to church (if they go) with out feeling rushed at the end of the weekend.
Plus it gives you a recovery day.
