It's almost as if they are tiny bits of either feta or parmesan cheese, however every server i've ever asked about it swears it's not any kind of cheese but they can't tell me what it is.

If it's not cheese, then I'm guessing some idiot decided they need to refrigerate their dressing. Your "tiny bits" could be the result of the oil solidifying because it got too cold. Then the next day they just mix it all up again.

Just a guess I don't know what they put into their dressings.

It's either parmesan cheese, or little bits of fresh garlic.

I always thought it was parm cheese, but if not, it has to be garlic.
