Try vegetarian chili - Here's my recipe.
Nicky’s Three Bean Veggie Chili
1-2 tbls. olive oil
1 large yellow onion diced
1-2 cloves minced garlic
1 chipotle in adobo (Freeze the extras for future use. Please feel free to use extra if you like it really spicy, but be careful chipotles can be very hot!)
1 seeded, diced jalapeno
2 red bell peppers chopped
1 green bell pepper chopped
1 tbls. chili powder
2 tsp. ground cumin
1 can black beans, rinsed
1 can pinto beans, rinsed
1 can small red kidney beans, rinsed
1 large (28 oz) can crushed tomatoes
1 small (15 oz) can diced tomatoes
1 tbls. honey
1 cup frozen corn (Feel free to use fresh, just be sure to blanch it before adding it to the chili)
Put 1 - 2 tbls. olive oil in the bottom of heavy pot (like a Le Crueset dutch oven). Sautee onions over medium heat for 10 mins or until translucent. Add garlic, sautee for 30 sec to 1 min.
Add chopped chipotle and jalapeno, sautee for 1 min. Add chopped red and green peppers, cook for 5 min. Add remaining ingredients except for corn. Simmer for 30 - 45 minutes or until veggies are cooked.
Stir in corn last minute and serve.

Chili--you don't have to top it with Cheese
my recipe is
1 Lb ground beef (can substitute ground turkey if you desire)
1 can tomtato sauce ( if you like it chunky you can also add a can of diced tomatoes.with or without green chilis)
2 Tbs of cumin
1 tbs chili flakes
cayenne pepper to taste(if you like it hot use about 1-1 1/2 tsp, otherwise less)
1 can of chili beans
1 serrano chili (optional, I leave out if I am serving to kids that don't like it spicey)
1 red onion (minced)
2 cloves of garlic (crushed, fresh is better than jarred)
First I brown the ground meat. when the meat is almost done I add the crushed garlic and onion and brown just a little longer. Then I add the tomatoe sauce and put a little water in the can to rinse it and add it to the pot.(if adding diced tomatoes I add them at this point) I then add the spices and simmer for about 20 min.
While this is simmering I cut the serrano (you must wear gloves or use a baggy over your hand when you cut the chili or you will be sorry!! I learned this the hard way! They will burn your fingers but add a nice spice to your mouth.) Slice the chili longways and seed it. the seeds are very hot and so is the membrane. (You can add the seeds if you want a very spicey chili) Mince the chili and add to the pot.
Now it is time to add the beans...for every lb. of meat you add another can or you can ommit all together. This recipe can easily double or triple if needed.
Stir the chili and simmer for at least another 20-30 min. But if you have time, simmer on low for as long as 3 hrs(just keep checking on it and stir it every now and then) The longer it cooks together the better the flavor.
And you are done!
After you add all the ingredients you can transfer to a crockpot/slowcooker.
This is great to eat anytime but everyone loves this easy recipe and you can always add more stuff or take what you don't like away, its just the basics. This is perfect for pot lucks or a super bowl party too!

Baked Dutch Apple Pancake
Ingredients (use vegan versions):
1/3 cup maple syrup (I used low calorie pancake syrup)
1/4 cup brown sugar
3 tablespoons vegan margarine
2 apples thinly sliced (I leave the skin on for extra fiber but it’s your choice)
1 egg made with EnerG egg substitute
3/4 cup soymilk
1 tablespoon vegan margarine
1 1/4 cup flour (I used whole wheat pastry flour)
4 tablespoons sugar or sweetener of your choice
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup applesauce
Directions:
Preheat oven to 400 degrees F. Combine maple syrup, brown sugar, and margarine in a 9 inch round baking pan. Put in the oven for about 5 minutes, until the butter melts. Remove and stir to dissolve the sugar.
Arrange apple slices, overlapping, over the syrup mixture in the pan. Set aside.
Whisk together the egg replacer, soy milk, applesauce and melted margarine.
In a medium bowl combine flour, sugar, baking powder and salt. Pour in the soy milk mixture and stir until smooth. Pour batter over the apples.
Bake for 20 to 25 minutes. Remove from oven and turn out onto a serving plate.
Serves: 4-6 servings
Preparation time: 45 minutes

my baby has a dairy and egg allergy and i have had to modify my own diet so my baby isnt tempted to eat the things I would otherwise have eaten. i cook pretty much the same stuff as before but replace usual cheese for dairy free versions, replace dairy milk with soya milk and replace butter with pure (plant based rather than dairy). if you have just been diagnosed with an allergy, ask your doctor to refer you to a dietitian for advice or you could also try and look at soya milk websites as they often offer a wealth of recipes.

fry off some chopped bacon(rashers-streaky are best)
add some green lentils, cook for about 3 mins.
add enough chicken stock to cover. add lid.
simmer until soft (20 mins 'ish'). V tasty, nutritious, and quick.
patatas Bravas without the mayonnaise.
Chop peeled potatoes into about 1 inch cubes.
Deep fry.
serve covered with homemade tomato sauce
Homemade tom sc.
1 tsp oil
1 small onion
1 can chopped tomatoes
1/2 tsp sugar
good pinch of oregano or basil or mixed herbs
good pinch of fresh parsley
1/2 tsp vinegar
chop onion finely. cook without colour in oil until transparent. Add the rest of the ingredients and simmer.
at least 20 mins. then you can moule it.
If you simmer it for longer however, it becomes smoother and thicker, and there's no need to moule or liquidise it.
goes great with fried fish, fried potatoes , rice, beans.
multiply the amounts, and always have some 'on hand' in your fridge.

I know a chocolate cake dairy free recipe!
grease and line a cake tin then....
250g plain flour
4 tbsp cocoa powder
250g castor sugar
1 tsp bicarbonate of soda
half tsp of salt
mix all dry ingredients together.
in a separate bowl mix together.....
5 tbsp vegetable oil
1 tbsp vinegar
1 tsp vanilla essence
250ml warm water
then keepadding to dry ingredients until its a thick but creamy consistency. put in a pre-heated oven at 350F/180C/Gas 4 for 30-35 minutes or until cake has risen and springs back up when pressed.
