Believe it or not, I usually get tuna to eat raw or rare at Stop & Shop. It is previously frozen, but it is frozen when it's fresh, so I've never had a problem with wondering about how good it is.

If you want to get something a little better, find a fish market with a great reputation near you and go there. The tuna (use the loin) should be bright red in color and have little or no fishy smell. If it's starting to dull or turn gray, or if it has a fishy smell, it's not the quality you are looking for.

And the grade of the tuna, despite the snobbish opinions, doesn't particularly matter as long as it's really fresh. I hate pretentious cooks!

Find a fish monger that you can trust, and he/she will point you in the right direction. I doubt you will find true sashimi quality tuna at any supermarket, but your local seafood market can probably meet your needs. My favorite raw tuna is Ahi, and be forewarned that it is quite expensive.

You need to find Sashimi grade tuna. Find a fish monger that you really trust, or do a lot of research to where you can be sure you're getting what you're buying.
