Yes, put the potato in salt water and a little bit of vinegar, to keep it from turning brown. Enjoy the pot roast. What time is dinner? LOL

Sure! I've done this many times to cut down on prep times. Just throw them in a pot, cover them with cold water and shove it in the fridge. They'll be perfect the next day.
