Paella
Ingredients
(8 servings)
1 One and a half pound lobster, cooked
1 lb Shrimp
1 Dozen or more small clams
1 qt Mussels
1 One and a half pound chicken
1 ts Oregano
2 Peppercorns
1 Clove garlic, peeled
1 1/2 ts Salt
6 tb Olive oil
1 ts Vinegar
2 oz Ham, cut in thin strips
1 Chorizo (hot Spanish sausage), sliced
1 oz Salt pork, finely chopped
1 Onion, peeled and chopped
1 Green pepper, seeded and chopped
1/2 ts Ground coriander
1 ts Capers
3 tb Tomato sauce
2 1/4 c Rice, washed and drained
4 c Boiling water
1 ts Saffron
1 cn Peas, drained
1 cn Pimientos
Instructions
Remove meat from the lobster. Shell and devein shrimp. Scrub mussels and clams. Cut chicken into medium sized serving pieces. Combine oregano, peppercorns, garlic, salt, two Tbsp of the olive oil and the vinegar and mash with back of spoon or with a mortar. Rub chicken with the mixture.
Heat remaining olive oil in a deep, heavy skillet and brown chicken lightly over moderate het. Add ham, chorizo, salt pork, onion, green pepper, coriander and capers. Cook ten minutes over low heat. Add tomato sauce and rice and cook 5 minutes. Add boiling water, saffron and shrimp. Mix well and cook rapidly, covered, until liquid is absorbed, about 20 minutes. With a large spoon, turn rice from top to bottom.
Add lobster meat and peas; cover and cook 5 minutes longer. Steam mussels and clams in a little water until their shells open. Heat the pimientos and drain. Us the mussels, clams and pimientos as a garnish.
Yield: 6-8 servings

Serves two
I usually use a bag of mixed seafood my fishmonger makes up for me, but you can buy those in a supermarket now, with mussels, squid and king prawns in.
I bag mixed seafood
I chicken breast, cooked and cut into chunks
Half a red pepper, cut into largish chunks
two large handfuls Paella rice
2/3 pint hot fish stock with saffron strands in it
crushed black peppercorns
handful of peas
large onion, thinly sliced
2 cloves garlic, finely chopped
small glass white wine (optional)
in a large wok or other suitable pan, heat about a tablespoon of oil on high heat and add the onion and garlic. stir around until the garlic just starts to brown. Add the rice and stir until all the oil has been absorbed by the rice. pour in the white wine if you are using it. keep stirring so the rice doesn't stick, and wait until the alcohol has steamed off (it won't smell boozy anymore) and add the stock with the saffron in it. turn the heat down to a bare simmer and leave, returning every now and then to stir. When the rice is just starting to lose it's 'bite', add the seafood (if it's raw), the red pepper, crushed peppercorns, chicken and peas. If using cooked seafood from the supermarket, leave adding it until the very last minute or it gets tough.
The rice should absorb all the stock, leaving a soft, smooth kind of texture.
Serve with warm crusty bread to mop up

Fish or Meat
Slice and chop a onion and a red pepper, 2 garlic cloves crashed and fry in a large pan for 5 mins.
Add a packet of spices of paella mix, you can buy this in supermarkets its called PAELLERO
300 mils of rice
600 to 700 mils of chicken stock
Stir and bring to the boil and simmer for 15 mins
add your fish ie: uncooked prawns, wash mussels, clams, squid
rings and whole unpeeled prawns.
don't forget the peas
i normally do half a kilo of the shellfish
cook on a medium heat for 10 to 15 mins until the rice has cooked and the mussels and clams have open.
Serve with fresh farmhouse bread and garlic mayo
You can use chicken and rabbit or snails
also its loverly with a little bit of fish and meat

I cheat & use plain rice,with a mix called PALLERO. I have seen it in Sainsburys in the past in the speciality foods section,but I get mine on day trips to France.
I use chicken & sea food out of a bag.
Have also have used belly pork & rabbit pieces.
Chuck in some frozen beans or peas.
