Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Chicken Stuffing Casserole
3 large chicken breasts (skinned, boned and cooked)
3 cups stove top stuffing mix (prepare according to directions on box)
1 can cream of chicken soup (diluted with 1 cup water)
1 package mozarella cheese.
Mix all except cheese and place in casserole dish. Sprinkle cheese on top. Bake at 375 degrees for about 15-20 minutes. Fast, easy and delicious!

corn cheddar casserole
4 ounces melted butter
1 large onion, chopped
1 small green bell pepper, chopped
1 small red bell pepper, chopped
3 eggs
1 cup sour cream
1 can (about 15 ounces) cream-style corn
1/3 cup yellow cornmeal
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Cheddar cheese, or Pepper Jack
PREPARATION:
In a medium skillet, heat 2 tablespoons of butter over
medium heat. Add onion and peppers and cook until
tender, stirring occasionally. Remove from heat.
Combine remaining 6 tablespoons butter, eggs, and sour
cream in a large bowl.
Whisk together until smooth. Mix in corn, cornmeal,
salt and pepper. Stir in cheese and the onion-pepper
mixture.
Turn into a 2-quart buttered casserole. Bake in a
preheated 350° oven for 30 to 35 minutes, until puffed
and golden.
Serves 8.
