I'm sure you've got it right BUT variety is the spice of life right?I make this on occassions.This is a tasty and unusual meatloaf - an apricot and breadcrumb centre, layered with minced beef and wrapped in bacon! Delicious!
MEAT:
250g bacon rashers (remove the rind)
1 kg minced beef
1 onion, finely chopped
1 clove garlic, crushed
1 egg
pepper
FILLING:
200g chopped dried apricots
¾ cup soft white breadcrumbs
¼ cup finely chopped celery
1 egg
2 teaspoons finely grated lemon rind
40g toasted pine nuts (sub any other preferred nut, finely chopped)
2 tablespoons chopped parsley
1 tablespoon brown sugar
salt & pepper to taste
4-5 bay leaves

Lightly grease a sheet of alfoil. Place the bay leaves at intervals down the centre then lay the bacon along the centre, overlapping each slice slightly so they will form an outer 'skin' for the meat roll.
In a bowl, mix together the mince, diced onion, garlic, egg, & pepper. Spread this mixture evenly over the rashers.
In another bowl, mix together the filling ingredients and layer this on top of the mince.
Using the alfoil, roll the meatloaf up tightly, so that the rashers are on the outside and the filling enclosed. Pinch foil tightly shut.
Bake in a moderate oven for about an hour, then peel back the foil and cook a further 10 minutes to brown the bacon.

This is by far the best meatloaf I have ever tried/eaten.

2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon

1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Ground beef
Green Pepper
Onion
Salt, Pepper, Garlic
Bread Crumbs or Toast some bread & crumble up (about 2 pieces of bread)
Eggs (2)

Dice the green peppers & onions
Mix everything together & put in a loaf pan.
Bake for about 1 hour, cover with foil @ 325 degrees.
Uncover add ketchup & bbq mixture & let cook for another 10 min.

Meatloaf Castaic

Ingredients

1 1/4 lb Ground chuck
1 Egg, beaten
3/4 c Cheddar, cut in small cubes
(optional)
1 sm Onion, chopped
1/2 md Green pepper, chopped
1 Stalk celery, sliced thin
Lots black pepper, freshly
Ground
Dash paprika
Seasoned salt
1/2 c Milk
1/3 c Breadcrumbs, Italian-style
3 Slices bacon

Instructions
Combine chuck through seasonings. Add milk and breadcrumbs. If necessary, add a little additional milk until it just barely keeps together in your hands when you try to pick it up. In small open roasting pan, form into oval. Lay strips of bacon on top. Bake at 450 for approximately 1 hour, or until bacon is crisp. Remove to paper towels to drain before placing on serving platter.

I take 1 lb. ground chuck, add 2 eggs, crushed up crackers, onion, green pepper, salt, pepper and 1 (10 oz.) can tomato sauce.
Mix well and shape in pan. Bake 300-325 for approx. 1 hour. When almost done, I pour tomato sauce over the top of meatloaf and put back in oven for another 10 minutes. Good Luck!!

I live in MS, so this is the southern way to make a meatloaf.
! 1/2 Pound Ground chuck
2 Medium eggs
Lea an perrins !/2 bottle\
medium onion or pack of lipton onion soup mix
1/4 cup of milk
1 pack of saltine crackers crushed
or oatmeal or bread crumbs ect.
can tomatoe paste
salt, pepper, garlic
Bell pepper optional

Mix all top ingredients together cook in oven on high 20 min. top with ketchup if you like bake another 20 min.

The meatloaf i make is really very simple but very good, well alot of us like it in my family. I use Wheaties not cornflakes or bread crumbs for one, i crumble them up real good. I crack an egg in the mix and add about 1/2 cup of milk.
I chop some onions, also season it with whatever you like, meatloaf seasonings..garlic powder...pepper, salt...
I use a really good spaghetti sauce, (whatever you choose) about half the jar and add it to my meat instead of bland tomato sauce..it makes it taste better in my opinion and it doesn't come out real dry tasting.
Then put it in the oven and glaze ketchup over the top about 15 minutes before its done cooking. =)
I think I'm going to the store for onions, i have everything else, I want some meatloaf now! =)

i found this one a while ago and its great ive completly replaced my onld meatloaf with it yummy...even my kids eat it (and they dont eat much..)
