These are so quick and easy to make and the children love them:
Ginger Biscuits
Ingredients
2 oz vegan margarine
1 oz sugar
4oz flour
1 teaspoon ground ginger
Blend the margarine with the sugar until it is a smooth paste. Add the ginger and flour and blend thoroughly. If it too dry add a teaspoon of water - it should come together in a dough. Roll out on a floured surface and cut out using a cookie cutter. Place on a greased baking sheet in a 200 degree oven for 10 minutes or until golden brown.

My favorite thing to cook currently is a tofu stir-fry with peanut sauce. For the peanut sauce, I mix peanut butter, sriracha hot sauce, water, and a little cornstarch. (If you want it less healthy and more delicious, use coconut milk instead of some of the water.) The stir-fry has tofu, carrots, broccoli, cauliflower, onions, and sometimes red pepper. Once everything is mostly cooked I throw the sauce in there and let it cook down just slightly. Serve with brown rice. Yum!
You can see pictures and a fuller recipe on my blog entry linked below. There is another recipe there too.

Anything Italian. I love to experiment and perfect the sauces. I could hang out in the kitchen forever once I get a pot started!

I like baking cookies. I like to cook soups, roast and stews. Anything that fills the house with a delicious aroma is good. I like to cook chili and stew in the winter time. Soups when the weather is warmer.

Try Allio e Ollio?
Basically, it's pasta with olive oil, chilli pepper, garlic and parsley (all fresh).
Boil the pasta until aldente, fry up the chilli and garlic in olive oil, throw in the parsley and finally toss the drained, washed pasta in for a few minutes. Serve with a sprinkling of fresh parmasan and hey presto, what a dish!
