i have got some spuds, cheese, eggs, flavored sauces...i like curry...well, he does....i wanna make a mixture of stuff from the back of the cupboards. thanks...xxx

Pan Roasted Potatoes

Ingredients:

2 large Idaho Russet potatoes, peeled and thinly sliced
1/2 stick unsalted butter
Salt and Pepper
1/4 cup freshly grated Parmesan Cheese
2 tbs. Chives, chopped
1 tbsp. parsley, chopped

Procedure:

Preheat your oven to 450 degrees.

You’ll need a 9-inch cast iron pan or saute pan that has an ovenproof handle. Melt 1 tbsp. of the butter in the pan. Remove from stove. Line the bottom of the pan with sliced potatoes, slightly overlapping them.

Melt the remaining butter in your microwave. Lightly season the potatoes with salt and pepper, then a sprinkle of Parmesan, chives and parsley. Drizzle with a touch of the melted butter and repeat these steps until you’ve used up your potatoes, about five layers.

Cover the skillet with foil and place in your oven for 25 minutes. Remove foil and continue cooking for about 25-30 more minutes. Test for tenderness with a fork and remove from oven if done.

To serve, place a dish over the pan and invert the pan. You’ll have a beautifully browned mound of yummy potatoes. Garnish with a little fresh chopped parsley and serve.

Good potato salad, dice and boil 3 potatoes until soft, hardboil 3 eggs, fine cut one stick of celery and dice about 1/3 of a large onion, and add a few teaspoons of mayonaise to your liking, and a few squirts of mustard, goes great with curry sauce drizzled over it and you can kind of add anything else to it to make it interesting..

Twice baked potatoes, put a couple in the micro.. for like 4 mins, cut in half and carve out the middles with a spoon, fill with cheese and bacon or whatever and put in the oven on 350 for like 10 mins or so till cheese is melted and outer skin is crisp. Add some lawrys salt or italian seasoning or even curry powder to taste.. hope this helps, enjoy.

Peel and slice potatoes then boil for 10 minutes then drain. Place a layer of potato slices in the bottom of an oven dish then a layer of onion (fried or boiled) then a layer of grated cheese. Keep repeating layers til you fill dish or run out of ingredients. As a special treat add a layer of cooked bacon bits in the middle. The cook in oven on about 180 degrees or gas mark 5-6 til top is golden brown. It is gorgeous with a meal or on it's own for supper. Enjoy!

Potato, Cheese and Onion Bake
Ingriedents. Potatoes, Onions, single Cream. Garlic (optional)
Grate 4 oz. cheese. salt and pepper.
Lightly grease an ovenproof dish with butter or margarine.
Peel potatoes and cut into round slices, about 1/2" thick and do the same with the onions.
Fill the dish with alternate layers of potato, onion, cheese and cream. (and garlic if used.) Season each layer with salt and pepper to taste.
Put a thick layer of grated cheese on top.
Cook in oven at 190C until potatoes are cooked and the cheese brown on top.(about 40 minutes) Delicious

Crispy Potato Rounds

Ingredients

large potatoes
olive oil
salt





Wash the potatoes and remove any bad bits (leaving the skin on). Slice them into 1cm thick rounds. Preheat the oven to 200 degrees.

Boil the potaotes for 10 minutes and then drain. Brush 2 tablespoons of olive oil on a baking tray and sprinkle with salt. Place the potatoes on the tray in a flat layer. Brush the tops with olive oil and sprinkle with more salt. Put in the oven for 25 minutes until they start to crisp.

Boil and mash potatoes, layer them in an oven dish with tinned tomatoes and grated cheese, add some chopped smokey bacon to the middle layer. Top it with grated cheese and bake at 200 for 1 hour. If you are a veggie leave out the bacon. You can add onion and garlic to taste.

Potato grattan is yummy. You need to slice the potatoes into circles and layer them in a dish. You can add onions and some spices if you desire. Make up a stock cube, your choice if you want chicken, veg, etc and pour over. Pop in the oven and leave to cook. If the stock is not evapourating then pour some out. Add some grated cheese (also if desired) and eat!

MARK’S HOME FRIES

Olive oil, as needed
2 Russet or long white potatoes, peeled, cut in half lengthwise and sliced crosswise to make half moons.
1 medium onion, chopped
Salt and pepper to taste
1 tablespoon paprika, more or less to taste

The amount of olive oil is “as needed” but if you want really moist and tasty home fries I would employ a generous amount of oil. Using a large skillet, get the oil nice and hot and add the potatoes, onion, salt and pepper. Sauté until the potatoes are softened to your liking. A few minutes before they’re done mix in the paprika. Paprika can burn easily and doesn’t need to be cooked for long. Taste and add additional salt and pepper if necessary and serve.

Greek Potato Salad: Patatosalata

2 pounds red Bliss potatoes, boiled and quartered
1 medium red onion, halved and sliced into half moons
2 scallions, thinly chopped
24 Kalamata olives, pitted and halved
1 tablespoon finely chopped dill
1 tablespoon finely chopped fresh oregano
2 ounces olive oil
1/2 ounce red wine vinegar
1 lemon, juiced
Kosher salt
Freshly ground black pepper

In a medium salad bowl, combine the potatoes, onions, scallions, olives, dill, and oregano.

In a small bowl whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.

Pour over the salad and mix well. Refrigerate until ready to serve.

My potato salad...You won't be disappointed.

6 large potatoes
2 tbsp Mayo
4 eggs
1 bunch of green onions chopped.

Cook your potatoes with skin till its firm but cooked.
Drain and let it cool to were you are able to peel them.

Boil your eggs, shell and chop into bite size.
Make sure your potatoes are still warm and cut in bite size.
Put your potatoes in a bowl, add eggs, green onion and mayo. You can also add seed mustard depending on your taste.

Serve at room temperature or warm.
