Never been to New York before; wife and I have free flights!!, and no restrictions on time, so thought we should stay longer than the normal 3 days to see more. Trying to plan everything right, and as we will have to book flights before hotel, wondered if we'd give ourselves more options - as hotel price / offers will be important to us - by arriving (flights get in at noon daily from Birmingham) on a particular day, say Sunday or Monday; also whether there is a best way to arrange the start / finish dates to get the best out of the city.
We'll hopefully be travelling in early to mid-May.

New York City is great all year long, but spring is my favorite. You should have an awesome time. There is no particular day of the week that is better for arriving or departing, each has it's pluses and minuses. As far as hotels, for an idea check out Expedia or Travelocity or any of the numerous on-line travel booking sites and see what kind of rates are on offer. Also check out the link to Frommer's (http://www.frommers.com/destinations/newyorkcity/0021010027.html). That should give you a good idea of how prices go. Check out the travel talk section too. I'll recommend Pauline Frommer's guide to NYC to help you plan and give you great ideas. Check it out of the local library to get started. Since you'll be arriving around noon and hopefully through customs and baggage in a reasonable time, there sould be no problems getting to the city from the airport. Traffic shouldn't be too bad, so arrival days and departure days are entirely flexable. I hope that helped a little. If you have free flights then it shouldn't really matter when you leave the uk as it tends to be flights that alter the price a lot.
Hotels may be busier over the weekend but the prices are quite similar throughout the week so you may want to think about sorting that out soon.

I went to NY last year for a week from London and I didnt see any difference between hotel prices based on the day you reach there , except probly that hotels in Manhattan are a bit cheaper on the weekends than on the weekdays, for obvious reasons.
