Copper has better electrical conductivity than steel; aside from that, it will also generate less heat from the current flowing thru it than steel. Copper is more malleable than steel, a physical property which is essential in coil winding. Copper does not rust like steel, is less dense than steel, does not produce magnetic fields that can interfere with the electrical properties of the generator ...etc

See the basic criteria for a material to be used as winding material for electric machines are
1. it should offer least resistance to current flow(ideally zero).
2. It should have zero mane tic retentivity.
3. It should dissipate heat quickly(good conductor of heat).
Copper fits into all of these categories also is economical.So we use copper if in near future if one can find an alloy or composite material which is much better than copper we can use that too.

steel wire create magnetic fields. which will interfere with the magnetic fields of generator. To avoid the problem, they use copper wire. copper wire are insulated and use for winding on steel magnetic core. steel wire canot be used on steel magnetic core.

emf is experssed by: emf = N d(flux magnetic)/ dt You said the magnet has strong magnetic field. Now your task is how to make change of magnetic flux by time. You can do it by moving forward-backward the magnet in front of the coil. I would be better if you have rectifier. Basically LED bulb is operated by DC current but your generator is AC voltage generator.

Better conductivity is only part of the story. Copper won't get magnetised and so won't mess up the magnetic field.
