Stuffed Cabbage Rolls: 8cabbage rolls
INGREDIENTS
* 2/3 cup water
* 1/3 cup uncooked white rice
* 8 cabbage leaves
* 1 pound lean ground beef
* 1/4 cup chopped onion
* 1 egg, slightly beaten
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1 (10.75 ounce) can condensed tomato soup
DIRECTIONS
1. In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. Bring a large, wide saucepan of lightly salted water to a boil. Add cabbage leaves and cook for 2 to 4 minutes or until softened; drain.
3. In a medium mixing bowl, combine the ground beef, 1 cup cooked rice, onion, egg, salt and pepper, along with 2 tablespoons of tomato soup. Mix thoroughly.
4. Divide the beef mixture evenly among the cabbage leaves. Roll and secure them with toothpicks or string.
5. In a large skillet over medium heat, place the cabbage rolls and pour the remaining tomato soup over the top. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes, stirring and basting with the liquid often.

Stuffed cabbage
1# ground chuck
1/2 # ground pork
3 slices bacon, chopped
3/4 c. rice
1/2 can tomatoes
1 can tomato soup
cabbage
Add meats, rice, tomatoes together in bowl. Add generous garlic, salt, pepper, onion. Optional - lump of brown sugar. Separate cabbage leaves by placing cabbage in boiling water. Roll up filling inside leaves. Place in Dutch oven. Pour tomato soup and some water over, cook slowly for 2 hr.
Optional: instead of pork, use veal or lamb.

My favorite beef recipe is my husbands beef tips and noodles. He just cubes up whatever beef we have on hand, browns it and adds it to a couple of cans of cream of mushroom soup diluted with a little milk. He then cooks some egg noodles and serves the beef gravy over the noodles. Toss a salad and there's dinner. As for chicken, my mother in law gave me this recipe...it's delish and easy to make: Kings Ranch Chicken Ingredients: 1/4 cup margarine 1 medium green bell pepper, chopped 1 medium onion, chopped 1 can (10 3/4 oz.) condensed cream of mushroom soup 1 can (10 3/4 oz.) condensed cream of chicken soup 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies 2 cups cubed cooked chicken 12 corn tortillas, torn into bite-sized pieces 2 cups (8 oz.) shredded cheddar cheese Directions: Preheat oven to 325 degrees F. In a large saucepan, cook pepper and onion in melted margarine until tender, about 5 minutes. Add soups, RO*TEL and chicken, stirring until well blended. In a 13 x 9 x 2-inch baking pan, alternately layer tortillas, soup mixture and cheese, repeating for three layers. Bake 40 minutes or until hot and bubbling. Serves 8. Instead of tortillas, I use a bag of broken up Doritos. Gives the casserole a little more zip.

pre boil whole cabbage, then remove each leaf as its kind of cooked. in a bowl add raw ground beef, cooked rice, sauteed onions and garlic. salt and pepper. roll the beef mixture in the cabage leaves and bake for 2 hours. serve with chutney.

They are a LOT of work....so what I do is something I call "Lazy Piggies"....I cut the cabbage in chunks & throw it into a dutch oven; then I make the meat mixture (ground beef, rice--about 2/3 cup per pound of beef-- and egg); form those into meatballs and set on top of cabbage in pot. I then take about 4-5 cans of Campbell's tomato soup & thin them with about 2 soup cans of water and pour it over the meatballs. I dot the top with two sticks of butter and add ground pepper. Cook on medium heat until cabbage is tender, gently stirring the mixture as it cooks so the cabbage doesn't burn on the bottom. It tastes exactly the same but with less effort! I serve this over boiled potatoes. mmm-mmm! It is actually my dinner for tomorrow night!

It's best if you mix a little veal in with the beef.
Pre-boil (blanch) the cabagge for 2 minutes in boiling water
I use meat, ritz crackers, eggs, cooked rice, tint bits of celery & red peppers, sea alt, pepper and papprika.
stuff and cook in tomato sauce and tomato soup. 1/2 & 1/2
250 for 150 minutes.
