They manage to squeeze the scents out of other fruits, but why not berries?

NOT scented oils - essential oils. Scented oils are synthetic - essential oils are extracted from the fruit, plant, flower, herb, root, etc. They are all natural.

Oils are tyically found in seeds (food for the next generation). although there are a few oily fruits (Olives, oil palms)

Berries are rich in sugars (carbohydrates) because their function is to attract animals to disperse the seeds. The seeds in berries are usually small and not particularly rich sources of oil.

They do though ...I have found strawberry scented oil...
