Because that is what we call it and it isn't an inverted U anyway, it is a flat U, unless you want to observe it from the air and then you will complain about about right and left turns when you think they are L turns. We have enough trouble with the symbol for micro, leave this alone.

Because of its shape: a n would have been more appropriate but the ppl will think N-turn (then new questions like:why is there a traffic sign "N-TURN PROHIBITED" when actually it is an inverted "N" or Z on its side.?)

So hence its a U
