Arctic Bombe - Basically sponge flan case with pureed fruit - raspberries
work well or strawbs.
Put fruit in base of flan , pile hard vanilla ice cream on top, whip 4 egg whites until very stiff add 4oz sugar whisk again - pile on top of ice cream covering completely - Bake in VERY hot oven for 3-4 mins until meringue is golden brown - And No -the ice cream doesnt melt!!

I live in Dunfermline, and one of the small italian restaurants occasionally have mars bar cheesecake. Now I'm a huge cheesecake fan as it is but this is absolutely amazing - I can't even describe how good it is!!!
