A quick and easy meal to make is spagetti with a chilli/garlic/parsley olive oil sauce. Take however much spagetti u need and put it in a pan to boil. Add salt and olive oil (not too much) to the water. While it is boiling take some sort of container than u can make the sauce in. Its faster to put everything into the container than using a frying pan for it. I use one of those measuring jug things. First put about .5 - 1 inch of olive oil into the container - depending on how big it is. Then add salt and pepper - less salt than pepper though. Then add chilli flakes or some sort of spice/chilli powder. Then add crushed garlic - u can buy containers of it in supermarkets which saves a lot of time. Maybe add some crushed ginger if u want. Then add some parsley.
If you want u can also add a splash of light soy sauce and a tiny bit of lemon juice. You could also add some crunchy bacon or corizo
Then stick it in the microwave for 10-20 seconds.
Once thats done wait for the spagetti to finish and once its done drain the water and then pour the sauce over the spagetti.
It doesnt take long to make - maybe ten mins or so - depending on how long the spagetti takes - and there are only 2 or 3 things to wash up from it so it doesnt make a big mess either.
I sometimes add tomato paste and other things i find just to make it a bit different sometimes. If you put the right amount of everything - really depends on how much u want - then it tastes really good. Also add some grated cheese at the end so it melts with the spagetti while its still hot.

Pasta. microwave stuff they even do a sauce that has vegetables in it but is smooth like puree Dolmio range.Add some cheese hey presto a simple meal. Crusty bread is a nice touch too

do a curry, you can limit the veg to a pepper, mushrooms and a onion- if he dont like it then go supermarket and get him a steak and serve with chips and pepercorn sauce

Stuffed chicken breast
Ingredients
1 chicken breast with skin on
100g/3½oz quick-cook polenta
300ml/10½fl oz hot chicken stock
50g/1¾oz gorgonzola
1 tbsp butter
1 tbsp olive oil
Stir-fried chard, to serve (optional)
Method
1. Cut a slit lengthways into the chicken breast.
2. To make the polenta stuffing, put the quick-cook polenta in a mixing bowl and quickly whisk in the hot chicken stock. Stir in the gorgonzola and butter.
3. Stuff the chicken breast with the mixture, pushing the stuffing into the slit.
4. Heat the olive oil in a frying pan and fry the chicken breast, skin side down, for 5-7 minutes or until crisp and golden. Turn the chicken over and finish cooking on the other side for a further five minutes or until cooked through.
5. Serve on top stir-fried chard or green vegetables of your choice.
OR chicken-basque
Ingredients
1 x 3½ lb (1.75 kg) chicken, jointed into 8 pieces
2 large red peppers
1 very large or 2 medium onions
2 oz (50 g) sun-dried tomatoes in oil
2-3 tablespoons extra virgin olive oil
2 large cloves garlic, chopped
5 oz (150 g) chorizo sausage, skinned and cut into ½ inch (1 cm) slices
brown basmati rice measured to the 8 fl oz (225 ml) level in a glass measuring jug
10 fl oz (275 ml) chicken stock 6 fl oz (170 ml) dry white wine
1 level tablespoon tomato purée
½ level teaspoon hot paprika
1 level teaspoon chopped fresh herbs
2 oz (50 g) pitted black olives, halved
½ large orange, peeled and cut into wedges
salt and freshly milled black pepper
Start by seasoning the chicken joints well with salt and pepper. Next, slice the red peppers in half and remove the seeds and pith, then slice each half into six strips. Likewise, peel the onion and slice into strips of approximately the same size. The dried tomatoes should be drained, wiped dry with kitchen paper and then cut into ½ inch (1 cm) pieces.
Now heat 2 tablespoons olive oil in the casserole and, when it is fairly hot, add the chicken pieces – two or three at a time – and brown them to a nutty golden colour on both sides. As they brown remove them to a plate lined with kitchen paper, using a draining spoon. Next add a little more oil to the casserole, with the heat slightly higher than medium. As soon as the oil is hot, add the onion and peppers and allow them to brown a little at the edges, moving them around from time to time, for about 5 minutes.
After that, add the garlic, chorizo and dried tomatoes and toss these around for a minute or two until the garlic is pale golden and the chorizo has taken on some colour. Next, stir in the rice and, when the grains have a good coating of oil, add the stock, wine, tomato purée and paprika. As soon as everything has reached simmering point, turn the heat down to a gentle simmer. Add a little more seasoning, then place the chicken gently on top of everything (it's important to keep the rice down in the liquid). Finally, sprinkle the herbs over the chicken pieces and scatter the olives and wedges of orange in among them.
Cover with a tight-fitting lid and cook over the gentlest possible heat for about 50 minutes-1 hour or until the rice is cooked but still retains a little bite. Alternatively cook in a pre-heated oven at gas mark 4, 350°F (180°C), for 1 hour.
or Quiche Lorraine
Ingredients
170g/6oz short crust pastry
1 small onion, finely chopped
85g/3oz bacon, diced
1 tbsp butter
120ml/4fl oz milk
120ml/4fl oz single cream
2 eggs
1 egg, yolk only
55g/2oz mature cheddar, grated
salt and freshly ground black pepper
Method
1. Preheat the oven to 220C/400F/Gas 6.
2. Roll out the pastry and line a 20cm/8in flan ring. Cover with cling film and chill in the fridge for at least 30 minutes.
3. Meanwhile, gently fry the onion in the butter until soft but with no colour. Add the bacon and fry until cooked through. Drain off any excess liquid. Set aside.
4. Bake blind the pastry case in the preheated oven for 20 minutes until the pastry is dried out with no colour.
6. Reduce the oven temperature to 150C/300F/Gas 2.
5. Mix the milk, cream and eggs together and add to the onion mixture along with the cheese. Season.
6. Pour the mixture into the pasty case and bake in the oven for 45 minutes to 1 hour until the filling is set.
7. Remove the ring and bake for another 5 minutes to brown the pastry. Serve hot or cold.
