It depends on if you are boiling whole potatoes or diced potaotes. I do not peel the whole potatoes. It helps keep them together, granted the cooking time is longer, but you get a better product in the end.
This recipe that I am putting on here reccomends steaming the potatoes...which takes forever. I usually gently boil the potatoes instead. This is by far one of the best uses for potatoes ever!
Colcannon
3 pounds potatoes, scrubbed
2 sticks butter
1 1/4 cups hot milk
Freshly ground black pepper
1 head cabbage, cored and finely shredded
1 (1-pound) piece ham or bacon, cooked the day before
4 scallions, finely chopped
Chopped parsley leaves, for garnish
Steam the potatoes in their skins for 30 minutes. Peel them using a knife and fork. Chop with a knife before mashing. Mash thoroughly to remove all the lumps. Add 1 stick of butter in pieces. Gradually add hot milk, stirring all the time. Season with a few grinds of black pepper.
Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoons butter to tenderize it. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.
Put the ham in a large saucepan and cover with water. Bring to the boil and simmer for 45 minutes until tender. Drain. Remove any fat and chop into small pieces.
Add cabbage, scallions, and ham to mashed potatoes, stirring them in gently.
Serve in individual soup plates. Make an indentation on the top by swirling a wooden spoon. Put 1 tablespoon of butter into each indentation. Sprinkle with parsley.

If u wanna make mashed potatoes then of course u peel b4 u cook. But if ur boiling potatoes to make a salad then u better keep the skin on, then after it boils peel it and put in salad. If ur just cooking to eat , u can either peel after and b4 it doesn't matter but don't forget to wash it very well.

Actually I found that the potato skin is the most nutritional part of the potato.Its personal preference but I actually like the skin on the potato after boiling.

I boil all potatoes with the skins on. The skin tastes really good on potatoes and are supposed to be good for you. After I boil the potatoes, I just add salt, pepper, butter and milk, mash them and Enjoy!

Depends on the potatoes, if they are new potatoes then the skins will remain on. All other potatoes I peel them before boiling

when i make my potatoes i boil the potatoes with the skins on and then they hold a more uniform shape for the potato salad after i remove the skins.....also i cook the potatoes with the skins on and then peel for hash brown potatoes.....there are many things that you cook that require the potatoes to be precooked so i find it is better to leave the skins on....also the nuterients remain in the potatoes by cooking with the skins on...

it depends on what you are going to use them for.
for something like potato salad, DON'T peel. for something like mashed potatoes, you *can* peel. Generally, I never peel. Why lose the nutrients to the water if you don't have to?

according to what for. when i do mashed potatoes, i peel them before, but if i do some sort of jacket potatoes, i leave the skin.

Well here is a Mauritian recipe
*Boil them in salted water
*Cut them in halves or quarters(however you like it)
*Take off the peels
*Crush them
*Cook it in a LITTLE (1 spoonful) of tomato sauce
*Add any spices that you like
Its ready! You may cook it with Indian spices, thats also great!

BOIL POTATOES WITH SKIN AND ADD A TEA SPOON OF SALT IN THE WATER BEFORE BOILING.THIS WILL EASILY REMOVE SKIN.
