I have gall stone problems and suffer great pain when I eat fatty food, so I'm on a strict low-fat diet. I miss olive oil and fatty fish like salmon (even wonder whether I should have a bit - they're so good for you), but I fear the pain of an attack. Does masses of lemon juice (for example in salmon soup) really reduce the fat content, or does it just TASTE less fatty?

Lemon juice and vinegar do not reduce the actual fat content of foods. The acidity in the juice will counteract the oily flavors and textures of fats, but the overall fat content will remain the same.

I have no idea where you got an idea like that but NO. The only way to reduce your fat intake is to not take it in. If your gall bladder is really giving you that much trouble you just have it removed. It is a very non-invasive, laproscopic (tiny incisions) surgery and the recovery time isn't bad either.
