Cinnamon spice comes primarily from the Sri Lankan cinnamon known as Cinnamomum zeylanicum. It is obtained from the plant by drying the central part of the bark, which is then sold in stick or powdered form. The cinnamon oil is extracted from the waste products of drying and the pointed black fruits that the tree bears (1). This oil is used for medicinal purposes or flavoring (2). Cinnamomum Zeylanicum is the source of cinnamon that we in the United States commonly buy. Cinnamon contains cinnamic aldehyde, essential oils, Eugenol, metholeugenol, muscilage, sucrose, starch, and tannin (3).

All the other answers are right ... cinnamon is tree bark ... but what none of the others tell you is that TRUE cinnamon is very very rare! Most cinnamon sold in the US is from a different tree called CASSIA. It has a stronger cruder scent which actually works better in cooking and baking. It is also much cheaper. And no, unless you are buying from a spice merchant they don't tell you the difference, just know that true cinnamon only comes from SRI LANKA (Ceylon) so if it comes from anywhere else it probably is Cassia. But don't be alarmed, that isn't a bad thing.

Cinnamon.
Cinnamon is a bark. A cinnamon stick is merely a narrow piece of the bark that has been rolled into a "stick" that is cut into lengths.
