temporate ,in the tropics only high up in the mountains where it is cold enough and anywhere in europe ,
it needs cold nightsif the plants are too much in the hot sun the white bunched compacted califlower shoots up and becomes seed,and the part that we normally eat does not exist anymore.

Cauliflower is a cool-season vegetable and is more difficult to grow than other members of the cabbage family. Cauliflower is best started from transplants for both spring and fall crops. Do not transplant sooner than 2 to 3 weeks before the average frost-free date in the spring. Cauliflower is more sensitive to the cold than its cabbage-family relatives.
The optimum soil temperature for seed germination is 80°F., however, cauliflower will germinate at temperatures as low as 50°F.
Cauliflower grows best during sunny days with air temperatures of 70°F. If temperatures are above 80°F. during curd formation, leaves may form in the head, it may become rough in texture, or have a purple or green coloration.

Cool as mentioned. To make the head white you have to tie the leaves up over the head, or you will have brown cauliflower, if, I remember this correct.

temperate zone...the crucifers do very well at cold temperaturesa baove freezing.
