Is there any way I can fix this and not waste it?

no you can't just throw it away no matter what you do it will taste bad. don't give up try again another time.

Try a Nesco roaster (online), that's how we do our whole chickens and turkeys and it works like wonders and keeps the meat very moist. We use Sandra Lee's idea of putting butter & herbs under the turkey skin and using some broth in the bottom of the pan. The turkey or chickens sits on a rack so the moist heat evenly cooks it.

Emergency!!!
Cut hen in half, put in covered dish, zap in the microwave. Watch closely - checking every minute or two. When it's 'done', stick it under a broiler skin side up. This should give you a pretty good recovery.

Just remember don't over do the microwave.

If you overcook it, it could become dry and tough. I would take the meat off the bone, dice it up, and make a soup.

USE ROASTING MEAT ONLY LIKE ROASTING HAM!!!
