Lots.
Check out the stores and nightlife on the Kowloon Pennisula. Nathan Road is the main street where you can find almost anything.
Then, take the ferry across to Hong Kong Island. There are some amazing skyscrapers, and plenty of parks to wander around. You can also take a street-car-like tram up to a peak on Hong Kong Island... forgot the name of it.
Someone else mentioned the Buddha statue on Lantau Island. Another must see.
I would also recommend finding an out of the way Karaoke bar, and hanging out with locals. When I went to Hong Kong, that's why I did; as an American, it was fun getting to know people in an out of the way place.
I found that many people spoke excellent English, as it is a former colony.
Finally, check out the Penisula Hotel, near the end of the Kowloon Peninsula- very expensive to stay there, but you might just wander in and check it out. Amazing. They pick up their guests in Rolls Royces at the airport.

Hong Kong is a former British colony.. so English speakers are everywhere.
Put on a good pair of walking shoes and go shopping.
Eat the egg custards from the local bakery.
Sample food from vendors in the subway tunnels.
Every subway train (MTR) station is a shopper's heaven.
There is a jewelry store called 3D-Gold in Kowloon. It has a toilet made out of 24k gold... to use it you must spend a certain amount. It was listed in the 2002 Guiness World of Record as the most expensive washroom.
Take pictures of the skyscrapers.
Tourist traps: Victoria Peak, Disneyland, etc.

I'm looking forward to an answer to your question.
I'm heading to HongKong in March and I've never stayed there but read that since the Brits turned the control over , Hong Kong now is getting safety conscience and they have surplus money to try and drive the muggers out of the country ! That is Wonderful news since I got robbed in Guangzhou 2 years ago at airport and traumatized since .

Were I to visit Hong Kong, I feel sure that I would spend much of time looking at Chinese girls and women. I have always thought that Asian women are the world's most lovely. Then I would shop for electronics.

Eat Peking Duck at the Spring Deer restaurant.
It's their specialty and they know what they're doing.
EDIT:
And General's answer reminds me that Spring Deer
is on Kowloon and it is definitely a great place to spend
time (definitely see the Peninsula hotel, it is famous...
I think some James Bond film was filmed there).
When I was there we took the hovercraft thing to
Macau. That was even before the Portuguese turned Macau
back to the Chinese so I don't know if that all still works out
ok.
And the Big Buddha statue on Lantau is AWESOME!
It's at the Po Lin Monastary I think. Neat place. Now
that I'm remembering I want to go back!

I'm from HK, there lots of things that you would put on your wishinglist. I hope you will have a try from here I listing. One may worth to try.
1/ Victoria Peak, take the tram from Central and take a look the HK island view up hill, only takes 10 mins
2/ Go to HK museum of History, there'a permanent exhibition display about "HONG KONG STORY". You should go to check out what is all about from HK over past thousands years ago.
3/ Learn how to holding chopsticks to try different kind of Chinese cusines and deligacies in HK. You will taste lot of the lovely things
4/ Go to mtr.com.hk to check out the route travelling near by the shopping area at every nearest MTR stations.
5/ Lan Kwai Fong, the night clubs and bars you wanna hang out every night.
6/ Check out the Chung King Mansion to realise what is the "Chung King Express"
7/ Go to Mong Kok to check out the most cheapest stuff you wanna get. (But soemtimes copycat, beware!)

hang out with me. or you can go shopping. check out disney world. take the cable car around lantau island. check out giant buddha. take ferry rides. visit museums. go over to mainland china, shen zhen and get cheap dvds or bootleg purses. get a real good massage there too. the mall there is relatively safe
