Carbohydrates are classified as simple or complex. The classification depends on the chemical structure of the particular food source and reflects how quickly the sugar is digested and absorbed. Simple carbohydrates have one (single) or two (double) sugars while complex carbohydrates have three or more.

Examples of single sugars from foods include fructose (found in fruits) and galactose (found in milk products). Double sugars include lactose (found in dairy), maltose (found in certain vegetables and in beer), and sucrose (table sugar).

according to what has been discussed to us by our teacher. carbohydrates has three simple forms: galactose(milk sugar), glucose(sugar) and fructose(fruit sugar). carbohydrates has three kinds:
1. monosaccharides:hexoses or six carbon atoms(those are the said above, glucose, galactose and frutose)
2. monosaccharides: pentoses(5)- DNA and RNA.
3. disaccharides(2 monosacharides:
a. maltose(2 glucose)
b. lactose(glucose + galactose)
c. sucrose(glucose + frutose)
4. Polysaccharides- complex sugar that cannot easily be broken down and absorbed by the body. these are the forms that serves as stored sugar in organisms; not soluble in water.
a. glycogen-emergency sugar in the liver.
b. starch(plant sugar)
c. cellulose(cannot be digested).
only simple sugars are the ones that the body can digest because glycogen is too compact that is why it needs to be broken down first to glucose.

Simple sugars have one carbon ring. They are a single building block for carbohydrates, or a monosaccharide.
