Most commonly this is used in reference to highly processed food ingredients. A prime example is wheat flour -- in its healthiest form it's simply whole wheat flour and it's naturally a beige color. The more commonly found white flour is actually bleached to be white - nature didn't ever make it that way - and the bleaching process leeches out many of the nutrients that would be there if they simply left it alone.

To make up for the lack of nutrients as a result of bleaching, food chemists simply add them back, though from a far less natural source. They can also add in more than nature would have provided.

For me, having a product advertise that they have enriched ingredients isn't much of a draw -- it makes me wonder what they did to the food that they *need* to add nutrition to it.

Enriched ... thought it sounds good actually isn't always
Enriched wheat flour for example ... is processed wheat flour where the nutrients have been removed and then they attempt to put some back in ... better to get 100% wheat flour. The enriched flour doesn't allow you all the benefit of getting whole nutrients
