First off I was a waiter for 8 years while I was getting through school so I am a little biased.

First off, waiters make like $2.13 per hour (i did at least) and when we are working we are working for YOU. As a waiter I was very good and I would totally give my clients the royal treatment, so that is what the 20% is for.

That system works better because our money depends on your experience, therefore (generally speaking) we would treat you well so we earn more.

Take that same example and look at a place like McDonald's, where they pay there employees to serve us. Do I really need to explain this... the service is terrible and no one seems to get anything right, and they dont really care either, because they are still getting their paycheck.

If you didn't tip you'd have to pay more for your meal. In the end it probably ends up being cheaper for you because the restaurant, or whatever, would have to charge more than the 20% to cover the extra taxes and other expenses that would incur.

Edit: Not to mention it encourages better service. If the server knows she doesn't have to impress, then she won't.

because service is not included. that's factored into their pay. they make less money because it is assumed that people will tip.

don't think of it as paying someone else's employee - what you're doing is skipping the middle management and giving the money to the person who earned it in the first place.

The restaurant does not pay the servers enough. The tips are figured into their pay. And, in the end, they are working for you, since you are the ultimate customer.

Most service staff receive slightly below minimum wage , they rely on the tips to stave off desperation.
Saying that I do still believe you tip good service and do not tip bad service.
