I am not a huge fan of eggplant or artichokes either. If you are looking for something substantial, you might want to try a Portabella mushroom sauteed in olive oil with some roasted peppers / onions and a nice sharp cheese. On foccia bread, it would be delicious. And a little fresh rosemary too.
If you never had a portabella mushroom before, I highly recommend it, even if you aren't a typical mushroom fan. The texture of the portabella is much more dense than other mushrooms.

Black Olives, Sliced
Extra Virgin Olive Oil OR Horseradish (Jack Daniels) or Dijon Mustard (Trader Joe's)
Toasted Whole Grain Bread
It sounds plain, but if you use very fresh ingredients this is an awesome sandwich.

I like to mix mayonnaise and spicy mustard 3:1 ratio and spread on both slices of homemade rosemary bread. Use any greens you like, I usually use romaine and baby spinach, top that with a slice or two of vine-ripened tomato and thin slices of cucumber and mushroom. Add a ring or two of sweet red pepper (capsicum). I've also added sliced black olives and bread-and-butter pickles at times. If you eat egg and dairy products, add sliced, hard-boiled egg and a slice of your favorite cheese. I like to use provolone.
This is a messy sandwich. You definitely need to eat this over a plate or the sink, as bits will fall out.

The veggie sandwiches I make for the vegetarians that stay with us have onions, cucumbers, green peppers, lettuce, tomatoes, cheese, mayo, leeks, green beans, spinach, cilantro, green & black olives, mushrooms, and my garlic sour cream spread.
They love it and can pick which toppings they like. Subway & Quiznos has nothing on me !!

My favorite veggie sub is at publix deli. I get a sub on wheat with spicy boars head mustard, swiss cheese and all the veggies except the hot peppers. I love it.

It's all up to the chef. Whatever you like thats what you do I like olivesw tomatoes lettauce mushrooms small pieces of cucumber shredded carrotts spinach leaves and by now you can't pick it up but it's good I think I'll have to go make one now.

Green peppers, sweet onion,fresh tomatoe,lettuce (Your choice of lettuce) sliced radishes,slices of pickle.Yummy! Served on a sourdough roll with a little mayo and a little spicy brown mustard!
