Although it started with olive as a garnish, olive juice can be added to a martini to make it a dirty martini. The taste of olive distracts from the taste of straight gin and vermouth, easing the stiffness of the drink.

You just add some olive juice to the martini to "dirty" the drink.

A Martini made with olive juice......
Dirty Martini
2 oz gin
1 tbsp dry vermouth
2 tbsp olive juice
2 olives
1. Place an ice cube and a small amount of water in a cocktail glass. Place in freezer for 2 - 3 minutes.
2. Fill a mixer with all ingredients including garnish. Cover and shake hard 3 - 4 times.
3. Remove cocktail glass from freezer, and empty. Strain contents of the mixer into the cocktail glass, include one of the olives, and serve.

I believe what makes it "dirty" is olives and olive juice.

I think they put green olive juice in it, which makes it cloudy looking.
