I know infantry reservists are being deployed to Iraq.

So I want to know whether MOS matters in getting deployed to Iraq. I know Marine Corp infantry reservists get deployed to Iraq, but is there a chance for a guy in intellegence or mechanics to be deployed?

Everyone deploys but your MOS will determine where you go as far as frontline in the rear. Also there are few MOS's that do not deploy often unless there is a urgent need. Final, duty station plays a part on if you go and if you do go how often.

My cousin, a supply guy, just got sent there. He's a reservist for the Army.

03 is infantry (at least in the USMC)

It doesn't mater if you are active duty or reserve, once deployed you are actively engaged in your MOS.
