Try using an insulated cookie sheet.

First of all, get one of those cheap oven thermometers and keep it in your oven. All ovens are calibrated a little differently and if you use the thermometer as your guide rather than the dial, you can be sure you are at the right temperature. This is especially important in baking, which is more of a science than regular cooking.

Second, get some of those cookie sheets that have two layers of material with space between them. They aren't very expensive and will give you much better results. I have several of them.

Third, use parchment paper to bake on instead of greasing your pan. If you have no parchment paper and must grease the pan, use shortening instead of butter because it has a higher burn point.

Fourth, set a timer and pay attention while the cookies are baking. I have one type of cookie that I bake a lot, that I am actually famous for locally. When I bake them I set the timer for about two minutes less than I know the cookies bake for, and then sit and watch the cookies for the last two minutes because I want them to be PERFECT and I can SEE exactly when they reach that place.

I swear by a Pampered Chef cooking stone -- they bake the cookies really evenly (and no, I don't sell the stuff). Otherwise, always set your timer for less time than the recipe calls for, in case your cookies are smaller, then check and when they JUST start to become brownish on top take them out. Better a little less cooked than burned!

Take them out a minute or two earlier than the recipe tells you to. Also, cookies will continue to bake after taking them out of the oven. There is a possibility that you oven temp is "off". You might want to purchase an oven thermometer (not a cooking thermometer).

Make sure your oven isn't heating too hot. I always check my stuff when it is about half way through the estimated cooking time. When they start to turn brown on the top I remove from the oven. Let cool on the cookie sheet for a minute or two and remove them to finish cooling on a wire rack.

I always use parchment paper..that helps a bunch. Also, watch the first batch very carefully. I bake my cookies just until I see the edges barely start turn a light brown.
