saute' chicken breasts in extra virgin olive oil with crushed garlic cloves, fresh ground pepper, mushrooms, and oregano. Once it's done, sprinkle the blue cheese on top and remove it from pan. It's delicious as is or over rice or pasta.
You can also add small amounts to Alfredo sauce or spaghetti sauce. It's particularly good with steak as well. Just crumble a bit on top.
Because Blue Cheese has a strong flavor, you can use just a little at a time and still get an interesting addition to your meats and vegetables.
I like it best in a salad made with broccoli, carrots and cauliflower. Just add the crumbled blue cheese and balsamic vinaigrette and toss. It's better if you mix it up and let it sit in the fridge for a bit.

Blue Cheese Potato Salad
Makes 10 servings
Ingredients:
1 bunch green onions, washed and chopped
2 stalks celery, chopped
1/4 cup fresh dill, chopped
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon lemon juice
salt and pepper to taste
1/4 to 1/3 cup blue cheese, crumbled
2 1/2 pounds small red potatoes
salt and pepper to taste
Preparation:
Mix first 8 ingredients and let mixture sit overnight. This is very important, as the blue cheese needs to blend with the dressing.
The next day, cook the potatoes whole with skins on, approximately 20 minutes. Rinse them in cold water to stop the cooking. Once cooled, cut them into quarters or sixths and toss with the dressing. Salt and pepper to taste.
Rosemary and Blue Cheese Potatoes
Yield: 6 Servings
Ingredients:
1-1/2 lb. red potatoes; cut in 1/2" cubes
2 tbsp. butter
2 tbsp. blue cheese
1 tsp. minced fresh rosemary
2 tbsp. minced fresh parsley
1 Dash salt; pepper, and cayenne
Instructions:
Cook the potatoes 10 minutes in a pot of rapidly boiling salted water. Drain and set aside.
Melt the butter and blue cheese and add the rosemary. Combine the partially cooked potatoes and the butter mixture and place on an ungreased baking sheet.
Bake in a preheated 375 degree oven 20 to 25 minutes. Remove from the oven and sprinkle with the parsley, salt, pepper, and cayenne. Mix well.
Blue Cheese Minestrone
Ingredients
(1 servings)
2 lb Beef rib bones
2 1/2 qt Water
1 c Dried cranberry or kidney be
2 lb Smoked meaty ham hocks, cut
3 Large carrots, sliced crossw
1 Large onion, chopped
1/2 c Chopped fresh parsley
1 Clove garlic, minced or mash
1 ts Dry mustard
4 oz Uncooked lasagne, broken
1 oz Bleu cheese, crumbled
1/2 lb Cabbage, finely shredded
Salt to taste
Instructions
Place beef bones in kettle, cover with water, bring to a))) boil, reduce heat, cover, and simmer for 4 hours. Chill bones and broth and remove fat from surface. Add beans and ham hocks, heat to boiling, reduce heat, cover, and simmer for 2 hrs. more. Chill and remove fat from surface; remove meat from bones; return meat to soup. Add carrots, onions, parsley, garlic, mustard, lasagne, and bleu cheese. Cover and simmer 2 hours more. Add cabbage; cook 5 mins. or until tender. Taste; add sat if necessary. Makes 8 servings.

Add crumbled up cheese to buttermilk and store in fridge. Give it a good shake now and then, and after two to three days, you'll have a great dressing for salads or anything else you choose. It's great crumbled on salads,burgers,even on peppered roast beef sandwiches in a hoagie bun!

A very simple and tasty way to use blue cheese is to mix it 50:50 with butter and spread it on crackers or toast. It's VERY tasty!!!

I mix the bleu cheese with sour cream, chives, and pepper. I also make homemade ranch dressing, then I combine the two and it makes a wonderful veggie dip.

Mix it 50/50 with butter and cook some sirloins, when you flip them and they are almost done spread this on one side and it will kind of melt i learned this when i lived in texas and it is awesome!

I use it as a low carb meal. Roll it up in some hamburger and make little meat balls.
