My boyfriend is moving in with me we just found out he has diabetes and I need to go grocery shopping, I am looking for something low carb and tasty.. I appreciate your help!

My husband is also diabetic. His Doctor reccommended South Beach diet. They have some really good recipes.

I make the pumpkin pie (Libbey's recipe) sub equal or splenda

Remember it is simple carbs need to be limited (not neccessarily excluded entirely). includes white rice, potatoes, white flour, etc.

Sub Brown rice, Whole wheat pasta, high fiber breads for their white/processed counterparts.

Here is a great book to read. It was a fantastic help when my husband was first diagnosed. It dispelled alot of the myths.

Angel Food Cake can be eaten in small amounts by diabetics, but I advise him to cut back on the other carbohydrates during that meal in order to not upset the diet and blood sugar much. I use the same type of recipe for cakes for my family using Cool Whip. For the 4th, you could use Fat Free Cool Whip with strawberries or raspberries and blueberries. You are so thoughtful of your father-in-law. I am a diabetic and the hospital gives angel food cake as a dessert for their diabetic patients.

My dad's doctor said whole wheat bread is best, but no more than 2 slices a day. Splenda is great for sweetening, but for baking or cooking I suggest the Splenda Brown Sugar. My dad and sister, both diabetics, swear it tastes just like cooking with regular sugar. I've mostly just adjusted the amounts of salts and carbs I add to the food I serve. My dad also has high blood pressure and can only have 1/4 tsp total of salt a day.

The way diabetics eat pizza is to just consume the toppings, depending on what they are of course, but not the bread. Not the same, but a substitute "foundation" is an egg omelet with pizza toppings . . tomato sauce (very sparingly), cheese, olives, mushrooms . . perhaps small pieces of beef wieners or other types of meat.

Baked Ziti with Meatballs

Ingredients:

10ounces (300 g) ziti or penne
115-ounce (450 ml) container low-fat ricotta cheese
1cup (116 g) non-fat mozzarella cheese, grated
3tablespoons (15 g) Parmesan cheese
128- ounce (840 g) can pureed tomatoes with basil
1/8teaspoon (0.6ml) garlic powder
1/8teaspoon (0.6 ml) dried red pepper flakes
meatballs:
1pound (480 g) ground sirloin
1/8teaspoon (0.6ml) garlic powder
1/8teaspoon( 0.6 ml) onion powder
1/4cup (( 113 g) rolled oats
2ounces (60 ml) egg substitute
1tablespoon (15 ml) water
1/8teaspoon 0.6ml) kosher salt
freshly ground pepper
olive oil cooking spray

Preheat oven to 375 ° F(190° C), Gas Mark 5.
In a bowl stir together the ground sirloin, garlic and onion powder, rolled oats, egg substitute, water, salt and pepper. Coat a nonstick skillet with cooking spray. Make 1-inch in diameter meatballs and sauté in batches, on all sides until browned and cooked through. Set aside.
In a large pot of water cook the pasta as per package directions for al dente. Drain and set aside.
In a bowl combine the ricotta, mozzarella and Parmesan cheeses. Add the garlic powder and red pepper flakes to the canned tomato puree.
Place 1/4 cup tomato puree in the bottom of a casserole. Top with a layer of meatballs, dollops of cheese mixture and tomato puree. Layer the casserole topping with a few dollops of cheese mixture.
Bake in oven for 45 minutes until the ricotta is browned and the casserole is hot or cover and freeze. To prepare later, place in the oven and bake until hot or microwave.
