I am making pasta salad with chopped green peppers and red onions. I mix it all together with italian dressing. When I serve it, everything is great. But, after refrigerating it overnight, the next day the pasta has soaked up all the Italian dressing and it is very dry. I then have to add more dressing. Help!

Cook the pasta, drain, and mix with a little olive oil. The oil will coat the pasta preventing it from absorbing too much dressing.

Much better will be to set apart some of the olive oil coated pasta and refrigerate it. Then prepare a batch of salad the next day. The pasta will keep perfectly this way. The vegetables you add to the salad are crisper and taste much better when fresh and having the pasta already cooked, you can prepare a salad in a fly.

Toss the pasta in a bit of olive oil after cooking & draining. Add the veggies & chill overnight. Add the Italian dressing just before serving.

The olive oil will coat the pasta; the chill overnight will help the pasta keep its shape and coagulate the olive oil, creating a nice "shield" that will keep the pasta from absorbing the dressing.

Keep your pasta salad cold by placing the salad serving bowl over a larger bowl of ice, toss it gently during the serving process by folding it over on itself.

Make sure your rinse your pasta thoroughly in cold water after cooking. Also...make sure you cook your pasta aldente. You will be surprised how much salad dressing you need to coat. For instance...you know how when you purchase pasta salad at a deli and it is soaked in dressing? There is a reason they do this...it just takes a lot because you will always have some absorption. I always use the vegatable pasta that is very pretty in the salad too because of the colours. I think it's called Fuselli by Catelli. I never have a problem with that soaking up dressing.

Refrigerate it over night before adding the dressing. Right before you serve it, then add the italian and toss. Hopefully this helps with your predicament =]

if you heat it a little bit after refrigeration it will bring the dressing out but not 100%

Try cooking your pasta with olive oil-Nothing sticks to it...About a teaspoonful should do...
