Hummus
15 oz. can garbanzo beans (chickpeas) drained, reserving 1/3 cup liquid
3 Tbsp. lemon juice
1/2 cup tahini (sesame seed paste)
1 clove garlic, minced, or 4 cloves roasted garlic, mashed
1/2 tsp. salt
1/8 tsp. white pepper
PREPARATION:
Mash beans and blend with lemon juice, tahini, garlic and salt. The texture of the finished dip is up to you - make it totally smooth or leave some beans unmashed for more texture. Serve with pita crisps, crisp crackers or French bread slices. This also makes a delicious sandwich spread with smoked turkey or chicken.
Southwest Chicken Tostada Salad
INGREDIENTS:
9 oz. pkg. frozen southwest flavored cooked chicken strips
4 cups shredded lettuce
1 pint pkg. cherry tomatoes
1/2 cup southwest ranch salad dressing
1/2 cup shredded Mexican cheese blend
PREPARATION:
Heat chicken as directed on package. Toss with remaining ingredients except cheese. Plate and sprinkle with cheese. 4 servings
Tomato Tortellini Soup
INGREDIENTS:
2 (10 oz.) cans condensed tomato soup
9 oz. pkg. refrigerated cheese tortellini
1 cup frozen peas
1/4 cup grated Parmesan cheese
PREPARATION:
Dilute soups as directed on can. Combine in saucepan with tortellini and heat over medium heat until the soup boils, stirring frequently. Reduce heat, cover and simmer for 2 minutes. Add peas and simmer 2 more minutes until the tortellini is tender. Pour into thermoses and package cheese separately to sprinkle over soup before eating. 4 servings
BBQ Chicken Drummies
INGREDIENTS:
3 lbs. chicken drummies, thawed if frozen
1-1/4 cups barbecue sauce
2 Tbsp. chili sauce
1/4 cup honey
3 cloves garlic, minced
dash pepper
PREPARATION:
Pat the chicken drummies dry with a paper towel and place on broiler pan. Broil 5-6 inches from the heat for 8-10 minutes, turning often, until chicken is browned. Place in 3-4 quart crockpot.
Mix remaining ingredients in a small bowl and pour over drummies.
Cover and cook on LOW for 4-5 hours. These can be held for 1 hour after the cooking time on LOW.
Sour Cream Chicken Risotto
INGREDIENTS:
10 oz. pkg. garlic rice and vermicelli mix
1-1/2 cups water
9 oz. pkg. frozen diced fully cooked chicken
2 cups frozen baby peas
1 cup sour cream
1/2 cup grated Parmesan cheese
PREPARATION:
Prepare the mix according to package instructions, adding 1/2 cup more water. Five minutes before the rice is done, stir in the chicken and peas. Cook until rice and pasta are tender, stirring frequently. Remove from heat and stir in sour cream and cheese. Cover and let stand 5 minutes before serving. 4 servings

Here's two recipes - one for dinner - one for treats. (makes enough for a family of 5 - so use less stuff for less people)
1. Lamb Stir Fry - 500g diced lamb
- 5 packs beef flavoured 2 minute noodles
- 200g mixed frozen veges (corn is nice)
- bit of cooking oil.
Boil the noodles till soft. While they are cooking, fry the lamb in the oil. Add the drained noodles, the frozen veges and the beef flavour sachets from the noodles. Stir it together till hot and mixed. Yummy and SO QUICK!!
2. The BEST choc chip cookies EVER (makes about 60)
- I tin sweetened condensed milk
- 100g unsalted butter
- 1/4 cup white sugar
- 1 pack nestle choc chips
- 3 cups Self Raising Flour (all purpose)
Turn on your oven to moderate (180c). Melt the butter in a big bowl in the microwave. Add the sugar, condensed milk and flour and mix it up. Add the choc chips. Roll balls of mix onto cookie trays (either spray the trays with oil or use baking paper). Cook for only about 8 minutes - take them out as soon as the edges just start to turn light brown. The cookies will crisp on the outside and the inside will stay soft....mmmm I think I have to go and make some right now!!!

Oven Fried Chicken
¼ t red pepper
1 cup cornflakes crushed
1 t paprika
½ t garlic powder
¼ cup buttermilk
6 chicken breasts halved
Combine 1st 4 ingredients in plastic bag. Skin breasts and brush both sides with buttermilk. Place chicken in bag of crumbs and shake to coat. Place chicken on broiler pan that has been sprayed with vegetable spray. Bake at 400° for 45 min. or until done. 6 servings. Other pieces of the chicken can be used for this recipe.
3 spices plus milk + flakes for coating. I don't know if you include "chicken" as an ingredient or what... if you do, that makes 6.

I rarely measure when I cook, I have all my recipes in my head. Here is an easy one.
Brown boneless skinless chicken breasts put in a crock pot with chicken gravy (about 2 cans) and some chopped onion.
Meanwhile boil some frozen Gnocchi. When onions are almost completely cooked add drained gnocchi and some paprika. Cook until the onions are done. Stir in some sour cream just before serving.
