If the walks are really long, I'd be worried about her getting uncomfortable in the cold... but unless you're in extreme temperatures, I wouldn't worry about frostbite.
When I was a kid, I've had my poor doggy's paws start to bleed when I had her out in the snow too long :( I felt awful and never kept her out that long again!
Just consider how you'd feel with naked feet and ears out in the cold, and keep it in mind when you go on walks! (Not to say never take her on walks, but keep the length in check!)

Dont worry about it, my dog has long floppy ears too. Its actually better when they have longer ears, the cold wind cant get into their actual ear drum and everything as easily as it can with dogs who have ears that stick up, so that will save you ear infection problems. As far as frost bite goes, most dogs with longer ears tend to be hounds or some sort of beagle or spaniel, those dogs are used for hunting and searching anyway, so the breed is really meant to be in the cold and can handle it better than other breeds. If I was you I'd worry more about your dogs feet if youre walking in snow. They have special cloth type covers that tie around the dogs feet, they use these for the dogs that are used in the Arctic Challenges in Alaska, and keeps them from getting cold and frost bit.

There is a thing they call a Snood. It is used to hold long ears getting in food and is usually associated with cocker spaniels. With the ears held back you won't have to de-ice your dog before coming in the house.
It is a knitted tube that just slips over the head and holds the ears.

It's possible, but short ears versus long wouldn't make much of a difference. If she seems to be in pain or showing discomfort, shorten the walks, or get her a hat. They're easy to find, as a lot of owners put hats on their Afghan hounds to prevent burrs getting stuck in the fur.

You can buy a snood like are used for Sighthounds with long ears. Try on ebay, but you may have to look a bit to find a fleece one.
They are very easy to sew, its just a tube with elastic on both ends, I have made quite a few.

Water lots of water for both you and the dogs, a lead( and depending on what breed you might want a retractable lead if you can not let your dogs of the lead) treats, food and poop bags (if no bins are provided carry the bag on you until you find a bin.) and a Phone. If it is a hot day you might want to consider getting some sunblock for your dogs because UV rays burn them as much as they burn us. Have fun

I don't know the answer to your question, but I just wanted to say how cute to be concerned like that.
I'm betting you could get a wooly hat for your dog, but you may have to train her to wear it (ie she may not like it).
Good luck.
