I made some about a month ago and forgot to add the eggs. I served them to the public bragging before I realized what I done. They said leave them out they were awesome.
Personally I thought I could tell the difference.

I think it sticks it all together. I baked a cake and forgot the eggs and it turned out ok. Don't think it will work with cookies

I'm not sure on this, but I think it's to keep cookies together because eggs are liquid and flour and sugar and everything is all powdery, so the eggs acts as the thing that holds everything together.

Eggs are the ingredient that keeps your cookies from crumbling, you can make them without eggs too, but you wil have to roll the dough into balls, it may take a while to get them to stick togehter!
