I have left over ham from New Years Dinner. I trimmed it from yhe bone and am making beans with the ham bone in the crock pot. MMMMMM! Anyways. I have three kids that are picky eaters and I need to prepare dinner now. What ideas do you have for left over chunks of ham for a quick and kid friendly meal?

Cook some spiral or elbow pasta, saute the ham bits with peas, diced carrots, corn kernels in olive or sunflower or corn oil, add some tomato paste and then add the cooked pasta with some liquid from the pasta water, adjust the salt and sprinkle some cheese just before you serve and trust me they will eat it.

You have now provided protein, carbs, good fat, color and fun.

Crustless ham and cheese quiche --

1 cup diced ham
1/2 c shredded cheese
1/2 onion, finely diced

Toss with 1 Tbsp flour and place in a greased, round baking dish

Pour on top 4 eggs, lightly beaten with salt and peper to taste with 1/4 tsp. cayenne pepper (opt. for the kids).

Bake in a 350 degree oven for 25 minutes, or until eggs are set.

Serve with a tossed salad or steamed veggies.

Idea one: Roll up grated cheese with a hint of mustard and lemon juice stirred with the cubed ham into a croissant roll and bake.

Idea two: Stir fry it with vegies and throw in a (cooked) one of those 30 cent dried noodle packs, season with either beef broth mixed with soya sauce or oyster sauce (not very much, maybe a teaspoon or so) with soya sauce. For another time use Shangai noodles found in the refrigreator section at the grocer - kids love them.

Ham and cheese po' Boys
Slice hoagie bun and lightly butter. Add a little mayo.
Place ham on one side and Monterrey jack cheese on the other.
You can lightly salt/pepper if ya want.
Place under broiler until cheese melts. Watch it so they don't burn.
