No difference but added coloring. People believe that the yellow ones are stronger and saltier but it's not. It's just the food coloring that fools the mind and deceives the taste buds! :)

The yellow cheddar cheese has a coloring in it, which is supposed to be annatto (a sort of spice which isn't hot, it has a subtle taste, and a very non-subtle brilliant orange-red color) - annatto is also called achiote and it's used in cooking from southern Mexico and I think from the Caribbean. but probably there is some cheese that uses a less natural coloring than annatto.

Hi,
There's no dye in white chedder cheese. Dye has been used for many years to make chedder look more appetizing by adding an orange dye.
I have known this for years and tend to bye the orange chedder I guess because I'm so used to eating it. The white chedder is just as good of course, it's just something we've grown used to.
