So far, I know:


1 fresh herb = 1/2 dried herb

dry white wine = apple juice

tarragon = rosemary

chicken stock = veggie stock = beef stock

onion = shallots

(I'm using equal as an abbreviation; I know these things aren't exactly the same thing)

Try this- they have substitutions for just about everything you could ever desire!

Some of my favorites:
1 tsp Baking Powder = 1 tsp baking soda plus 1/2 tsp cream of tartar
1 c. Light corn syrup = 1 c. sugar plus 1/4 c. water.
for herbs actually it is a ratio of 3:1: 3 tsp fresh chopped Herb = 3/4 to 1 tsp dried herbs
1 c. Sour Cream = 1 c. plain yogurt
3/4 c. Cracker crumbs = 1 c. dry bread crumbs

Buttermilk: 1 tablespoon of lemon juice or white vinegar plus enough milk to make 1 cup equals 1 cup of buttermilk

Cream of Tartar: 3 teaspoons of lemon juice or 3 teaspoons of vinegar equals 1 teaspoon of cream of tartar

Dry Mustard: 2 teaspoons of prepared yellow mustard equals 1 teaspoon of dried mustard

Fresh Herbs: 1 teaspoon of dried or 1/4 teaspoon of powdered equals 1 tablespoon of fresh herbs

Ketchup: 1/2 cup of tomato sauce mixed with 2 tablespoons sugar and 1 tablespoon vinegar equals 1/2 cup of ketchup

Semi-sweet Chocolate: 1 square of unsweetened chocolate plus 1 tablespoon white sugar equals 1 ounce semi-sweet chocolate

Sour Cream: 1 cup of cottage cheese blended with 2 tablespoons of milk and 1 tablespoon of lemon juice, or 1 cup of yogurt equals 1 cup of sour cream

Sugar, white: 1 cup of packed brown sugar or 2 cups of powdered sugar equals 1 cup of white granulated sugar

Unsweetened Chocolate: 3 tablespoons of cocoa powder plus 1 tablespoon shortening equals 1 ounce of unsweetened chocolate

You're getting a little too liberal with the substituting. Remember: substitutions are good in a pinch only. Always strive to use the correct ingredients.
