here is a easy dish and healthy
take a sweet potato grade it and then with a chopped onion saute them together until the onion has slight browned, you could add green peppers chopped fine to this mix if you like spices add your favorite hot sauce stir until the sweet potato has darkend. It will be now slightly camelised. stir and then let cool.
take chicken breasts and put it one at a time in a ziplock bag and pound it flat.
remove the flattened breast and thake a handfull of the sweet pot mix and roll it into a ball
place into the center of each chicken breast and then roll the breast around the mix, using a tooth pick hold it together
Heat a pan with olive oil and brown the rolled chicken breast turning until its browned all over then remove.
add a small amount of apple juice into the pan and heat stirring the browned remaines from the chicken simmer 2-3 min reducing the liquid. while its simmering slice the chicken on an angle and pour the apple juice reduction over it serve with you favorite green veg. ENJOY.

I use chicken thigh and leg quarters for this recipe but it works with chicken breasts also. Buy some fresh rosemary, thyme and garlic. Preheat oven to 375*. On a baking sheet arrange chicken.
Slice 3 cloves of fresh garlic into thin slices (remove shell easily by lightly smashing garlic with flat side of knife). Butter tops (or use olive oil) of chicken. Arrange garlic on top each piece of chicken. Don't be stingy, garlic is good flavoring. Then lightly cover chicken with fresh rosemary and thyme. Bake covered in foil for about 30 min. Remove foil and finish cooking until done. Enjoy. (Serve with a side of chicken flavored rice)

I always bake my chicken. You could also put it in the crock pot.
