Each type of oil imparts its own flavor on the dish. Oils like safflower and soybean are very very light flavored and tend to not be noticeable in a dish. Olive oil on the other hand is generally a richer flavored oil and does add a subtle flavor to foods cooked with it.

Better is relative. If your talking about health I think overall Lighter oils are better but if you mean better taste then you will have to experiment with other types to see what you prefer.

There are a bunch of different oils. Olive oil has a characteristic flavor, and is used for that property.

Olive oil also has a low smokepoint - so it is not generally used for frying (the oil will break-down at high temps).

So, as an ingredient in Mediterranean cooking, olive oil is perfect. As a frying medium use canola or peanut oil.

Regular oil would be either vegtable oil or sun flower oil. Olive oil is made from olives (its greenish in color). It is all fat so they are more or less the same. Olive oil is very healthy though at room temperature, It even helps your body burn fat. But if you heat it, like any other oil, it becomes saturated fat. Anyhow, you should always monitor your intake coz too much of anything is harmful.

The difference is, olive oil is pressed from olives, while "regular" oils are pressed from different plant sources. Olive oil is no healthier than any other mono-unsaturated oil, its used more frequently in culinary applications because of the flavor it imparts.

Olive oil is better for you than veggie oil. It does taste better as well if you are cookie veggies on the stove. I don't use veggie oil. I use canola blend or canola oil. I like using Extra Virgin Olive Oil (aka EVOO to Rachael Ray) when I cook potatoes, less of a greasy taste.

If you use olive oil for salad, then it is better than regular oil. If you use it for cooking, then regular Canola oil is better and less expensive.
