I have a cook book that calls for superfine (caster) sugar. I know that it is NOT powdered/icing sugar or granulated sugar.

It's just regular sugar that has smaller crystals. This kind of sugar dissolves quickly in cold liquids.

You can make some by putting regular sugar in a food processor.

Superfine sugar can be created by buzzing regular granulated sugar in a food processor for a minute or so. If you run it too long you will have powdered sugar, but a minute or a little more is safe. The measurement is the same: for 1 cup of superfine, use 1 cup of granulated. Superfine is great in cakes; in fact, now I almost always use superfine in mine.

Superfine or caster sugar is powdered, but not like the powdered sugar you buy that sometimes has starch added. It can be bought at the store, or if in a pinch, put regular sugar in a food processor and grind until powdery. It is usually for recipes that need the sugar to dissolve or melt quickly.

Superfine sugar, like the other people said, is just sugar with finer crystals than that of granulated, yet larger than the powdered kind. You should be able to purchase superfine sugar in the baking aisle of your local supermarket. Since it is not the most commonly used sugar, it is usually sold in small boxes.

It's granulated sugar that is ground extra fine. If you don't have any than you can run granulated sugar in your food processor for a minute.

Well, i don't live in Orlando, but almost any grocery store will have those. I don't recommend subbing confectioner's sugar in a cheesecake. I would use regular sugar.

It is white fine sugar with small grains.
