Because bile is produced in the liver and stored in the gall bladder. The common bile duct through with bile passes is only so long. And that is why the gall bladder is located close to the liver.

The gall bladder is a storage site for the bile produced by the liver... when you eat a lot of fat at once the gall bladder releases the bile because its function is to break up fats.
