Actually, sleep probably evolved as a result of our day-night cycles, as a way to rest our bodies...we'd rest some other way if we had to, no big deal.
What's really important about the day-night cycle on earth is that it keeps the temperatures moderate. Some planets, like Mercury, have their rotations locked in resonance with their orbits -- so the same side of the planet faces the sun for very long periods. Our moon has such a resonance with us, which is why we always see the same side of it.
Such a rotation rate causes the side that's in the sun for long periods to get very, very hot...and the side that's in the shade to get very, very cold. On such a world, there are only moderate temperatures in the "twilight" areas along the border between sunlight and shade, while on our world our fairly rapid (24-hour) rotation works like a rotisserie on your barbeque...it warms us as we rotate but doesn't get us too hot, it cools us as we turn away from the sun but doesn't let us get too cold.
It's that tempreature moderating feature of the day-night cycle that was so important to live evolving on earth :)

Well, certain creatures, including humans have evolved to this pattern. Nocturnal hunters, and other creatures would likely be unable to find food. Human need night time light wavelengths to produce melatonin. This would likely be very disruptive if the situation were to change.
In addition to this, the tides, depending on the wax and wane of the moon would be altered.
I am sure there are more things, this I hope, gets you started thinking.
