because i only make the frozen kind but i heard homefries are better.

and is there any possible way to eliminate all oil?

I cut up a bunch of potatoes into strips then in a big bowl I toss them with a TINY little bit of olive oil (hardly any, really!!) and whatever seasonings I'mm in the mood for. Salt & Pepper, steak spice, cumin, fresh rosemary, oregano, worcestershire sauce....
Whatever I think will be good with my meal!
Then I bake them at about 375° for a half hour to an hour, depending how chunky my potato pieces are. Make sure to flip them over every 15 minutes or so.
Way healthier (and usually tastier!) than frozen fries!

maybe this will help. This is the way my mom always makes it. u should try and see if it works for you too.


1 large baking potato
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Cut potato into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil/spice mixture and place on a baking sheet.
Bake for 45 minutes in preheated oven.

I learned this awesome trick on the foodnetwork and it has transformed my home fries! Spread olive oil onto a cookie sheet(with sides like a jelly roll pan) and PREHEAT the pan in the oven for 10 minutes or so. When you place the raw, seasoned potato wedges onto the sheet, they sizzle and the starches carmelize and it makes them so much crispier! Turn them over halfway through and cook until desired brownness. Props to Tyler Florence!

Slice the potatoes into whatever size fries you like. You can peel them or not, depends on if you like the skin on. Boil them in salted, boiling water for about 2 -3 minutes. Drain them and pat them dry. Spread them in a single layer on a greased cookie sheet. Season if you wish and spray with a light layer of cooking spray over the top of the seasoning. Bake them at 425 for about 10 -15 minutes, depending on their size, until brown. Turn them once during cooking. Enjoy!
