Just stop serving them.

If you don't want make an issue of it just "forget" to put the booze in their next drink when they order. It is harder to do this if they are just drinking beer, obviously. If you do leave the booze out you shouldn't really charge them either.

first of all, a bartender has the right to refuse service to everybody they favor. in the journey that they sense you've had slightly too a lot, or in the journey that they sense that you'll basically be an issue, they have the right to refuse service and throw you out. Now, it relies upon on the problem. If the customer has been tipping nicely, and is not being loud or bothersome, i'd feed him a very watered down drink and tell him that it will be his very last. I often tell human beings at the same time as i believe they are drawing near their reduce, this way they don't look blind sided when I refuse to serve them. in the journey that they develop into abusive, verbally or bodily, I call the law enforcement officials. Your best bet is to cut them off before they get to drunk. But I do know from experience that there are those people who you can not tell are drunk till they have that one sip that puts them over the edge. You can always blame someone else like the other people said but remember this is your job, you take the credit or abuse you are gonna get from it. Most people will thank you in the morning the ones that don't were not worth worrying about anyway cause they have a problem. It is YOUR responsibility to do the right thing, just think...if you were on the road would you want that person driving next to you or behind you???no...so let them know for there safety and for yours you are not gonna serve them anymore...you feel they have had enough...and if they were to hurt someone you would not want that on your concious. Any way you do it, its not the easiest thing to do, but it is something you MUST do. Good Luck. Every person is different and should be handled differently so use your best judgement there is no set way to do it.

CB is right. Give them a "dry pour" if they are not drinking beer or wine. Make a show of tipping the both the mixer and the shot but never pour but a smig of shot in the drink. The drunk will start drinking good old water, soda, cranberry or whatever and start to rehydrate and come back to life. I found the best way to cut someone off is through their friends.

Aknowledge them but don't serve them, take the order and "4get" to make it. If its busy make other peoples' order. try to take note of who they are w/ and/or what kind of drink they order....sometimes they'll get sum1 else to order the drink 4 them. you might catch it especially if its out of the "norm". Remember you are held responsible 4 what happens when they leave.
I am a customer, if they are drunk enough they'll 4get. or better yet tell them you ran out of the drink they are requesting. If its a guy have a cute girl go over and distract dance (another bartender maybe) and if its a girl do the reverse. if there is a regular patron in the bar girl/guy "thats not drunk" explain to them then give them a free drink....not strong ofcourse.

Im not a bartender but id say flare up a conversation with them and ask them something about one of there brothers are close cousins, (if there pretty drunk theyd tell you all about em) try and get a number call em and tell them to come pick them up, not a taxi

Drunks can be bossy get angry easy and get violent. I would suggest having one of the bouncers near by..... inform the customer that they have reached there limit in a calm but firm tone...sweetness will only get you a drunk begging for just one more. Firmness gets your point across but don't be rude. Also offer them a free non-alcoholic beverage water or pop. Let them down easy but don't be too apologetic.
The bouncer should be nearby in case they get out of control then they can be escorted out for disturbing the other patrons.

Cut them off BEFORE they get to be that drunk. It's what i used to do all the time.

tell them the boss tells you to stop serving after X amount of alcohol because he does not want to be liable in someone elses' death due to drunk driving. State Law.

I'm not a bartender but my answer is just tell them that the place is about to close and you would gladly escort him and call a taxi for him.
